This year, I was introduced to the beloved coffee chain, 7 Brew, when one opened 20 minutes away from me in Provo, Utah. I’m ashamed to admit just how many times I’ve visited this coffee shop since its opening, despite the distance, but let’s just say it’s likely that I’m the one Dave Ramsey is referring to when he preaches against throwing money away on coffee.

The drink that’s kept me coming back time and time again is their popular and possibly staple drink, the iced blondie. I’m not sure what exactly it is about this drink that sets them apart from other competitors, like Dutch Bros’ Golden Eagle, but I haven’t strayed from it since I first tried it.

To be clear, 7 Brew’s iced blondie is a breve, not a latte, which, I think, makes the biggest difference. This, simply put, means that instead of adding milk, half and half is used. When replicating this drink at home, I’ve found that it makes it significantly creamier and, therefore, delectable.

Although their drinks are very decently priced, it’s becoming harder and harder to justify the drive, seeing as I don’t have one around the corner. And so, I’ve opted to create it at home.

Several 7 Brew baristas have posted the recipe online via TikTok already, so if you’re searching for an exact copycat recipe, I would start there. This recipe is one I’ve altered slightly and that I find replicates it best. Enjoy!

7 Brew Iced Blondie Recipe

Ingredients:

  • 1 Shot of Espresso
  • 3/4 Cup Half and Half
  • 1/4 Cup Blondie Sauce
  • Caramel Sauce for Drizzle (optional)

Instructions:

  1. To create the 7 Brew Blondie Sauce: In a jar or container, combine equal parts of vanilla syrup and caramel sauce. Shake until fully combined and store in your cabinet or pantry for future use.
  2. Line your cup with a drizzle of caramel. (optional)
  3. Brew your espresso and add it to the cup.
  4. Add 1/4 Cup of Blondie Sauce to your cup and mix the ingredients.
  5. Add 3/4 – 1 Cup of Half and Half and stir until well combined.
  6. Enjoy! 🙂

Notes:

  • I’m not sure exactly what brands of half and half, vanilla, or caramel 7 Brew uses, so this can factor into how well this DIY version perfectly replicates an iced blondie.
  • You can use a shot of espresso brewed from a Nespresso or use Instant Espresso. Completely optional.
  • I typically request extra caramel drizzle when I order my iced blondie, but it does not come standard in the drink, so opt out of that option if you’re looking for a more exact replica.
