How to Meal Prep Egg Bites: Easy & Nutritious High-Protein Breakfasts for Moms on the Go

Whether you prefer Starbucks or Dunkin’, I think we can all agree that their egg bites are delectable. If you’re like me, though, and want to prioritize protein in your diet while also saving money by replicating them at home, keep reading. I have a simple and healthy recipe for you that will make meal prepping these nutritious egg bites for the week simple and convenient!

I came across egg bites for the first time when I lived in South Jersey and frequented one of the many Dunkin’ Donuts locations in my vicinity. East-coasters love their Dunkin’ (understandably). When I moved to Utah, I was disappointed to find out that every location had been closed a few years prior. Luckily for me, though, this past July, a new location opened in West Jordan. Wanting to improve my eating and spending habits by meal prepping easy-to-go, healthy meals and snacks, I decided to make egg bites at home for the week.

The simplest (and most delicious, in my opinion) way to incorporate more protein into your breakfast is to add cottage cheese to your eggs. If you’ve never tried cottage cheese before, you may immediately assume that it won’t be your cup of tea. However, I was pleasantly surprised with the outcome and found it to not only make my eggs fluffier, but slightly enhance the taste as well. With the addition of cottage cheese, I no longer add milk, cheese, or any seasonings because I find the result to be satisfyingly tasty on its own.

It’s important to note that adding cottage cheese to your eggs does change the texture. If you’re someone who’s particular about the texture or consistency of your food, you may want to consider blending the cottage cheese prior to adding it to your eggs. This will eliminate that issue altogether.

Adding 1/2 cup of low fat cottage cheese can increase your protein intake by approximately 14 grams! The protein can fluctuate, of course, depending on how much you choose to add. Another simple and delicious addition that can boost your protein is chicken sausage. This pairs so deliciously with eggs in this recipe. The best part about eggs is that you can add whatever you’d like to it.

Tips:

  • Use a silicone muffin pan or cupcake liners to prevent the egg bites from sticking to the pan.
  • When freezing your egg bites, wrap them first in a paper towel and then in foil. Once frozen, you’ll find that the foil will stick to the egg bite so using a paper tower beneath will prevent this.
  • To save time and ensure even distribution, mix all of your ingredients and/or seasonings in a bowl prior to adding your mixture to the muffin pan.

Oven Baked Egg Bites Recipe:

Yield:7 egg bites

Materials:

  • Muffin pan (silicone muffin pan or cupcake liners optional)
  • Mixing bowl
  • Paper towels
  • Foil

Ingredients:

  • 7 Eggs
  • 1 Cup Cottage Cheese
  • 4 Chicken Sausage Links (optional)

Instructions:

  1. Pre-heat your oven to 350 F.
  2. Begin by cracking 7 eggs into a mixing bowl.
  3. Add 1 Cup Low Fat Cottage Cheese and mix thoroughly until well combined. (Blend cottage cheese for 20 seconds prior to adding to the egg mixture for a more creamy consistency)
  4. Microwave or cook your chicken sausage links according to the provided instructions and add to your egg mixture.
  5. Add any additional ingredients you’d like (ex: shredded cheese, salt, pepper, bell peppers, onion, spinach, etc)
  6. Spray your muffin pan with cooking oil or line with cupcake liners (optional).
  7. Evenly distribute your egg mixture into your muffin pan.
  8. Bake for 20 minutes and allow to cool.
  9. Once cool, wrap each egg bite individually with a paper towel followed by foil.
  10. Store in a freezer-safe airtight container for up to 2 months.
  11. When ready to eat, either thaw the egg bite in your refrigerator overnight and heat for 30-60 seconds the next day or re-heat frozen on a microwave-safe dish for 1-1.5 minutes.
